Zucchini Enchilada Roll Ups

If you’re looking for a healthy, low carb, meat free recipe, then look no further. These quick and easy Zucchini Roll Ups are the perfect healthy alternative to lasagne.


  • 4 large zucchinis
  • ½ small red onion
  • ½ small capsicum
  • 1 can of corn
  • 1 can of black beans
  • 1 cup salsa
  • 1.5 cups grated cheese
  • Salt & pepper to taste
  • 1 tbsp finely chopped coriander (optional garnish)


  1. Use a potato peeler to create zucchini “ribbons” place on a paper towel to absorb excess moisture
  2. Finely dice the onion and capsicum and add to a bowl with the canned corn, black beans, ½ the salsa salsa and ⅕ a cup of grated cheese
  3. To create the roll ups, overlap 4 zucchini ribbons (like the video) and place 1 heaped tablespoon of the corn mixture onto the bottom half of the zucchini. Roll carefully and place to the side. Continue to make as many as you can until you have no zucchini ribbons left (approximately 10 rolls)
  4. Place the rolls side by side in a baking dish and top with the salsa and grated cheese. Place in the oven for 20 minutes or until cheese is bubbly/golden
  5. Remove from the oven, top with coriander (optional) salt, pepper and enjoy!
